DIRECTIONS
- Mix Brine:
- Dissolve entire package in 2 quarts cold water, stirring until completely dissolved.
- Inject Meat (Recommended):
- Using a meat injector, inject brine evenly throughout the roast, especially toward the center, for consistent curing.
- Submerge & Cure:
- Place meat in a food-safe container or brine bag. Pour remaining brine over meat until fully submerged.
- Refrigerate at 34–40°F for 5–7 days, depending on thickness.
- Rinse & Rest:
- Remove from brine, rinse thoroughly, and pat dry.
- Refrigerate uncovered for 12–24 hours to form a slightly tacky surface (pellicle).
- Smoke:
- Smoke at low temperature until internal temperature reaches 145–150°F.
- Cool & Slice:
- Allow to cool completely before slicing. Slice thin and cook to desired crispness.
